I used to typically make my fajitas on the stove on a grill pan, but lately I have found that baking the chicken and veggies works quite well also. On busy days, or when I don’t want to linger over the stove, this recipe is perfect to get a dinner everyone loves onto the table, and pretty fast too!
These sheet pan chicken fajitas are really so simple to make because you can prep the ingredients the day of, or the night before. This recipe is also a time saver because you do not need to linger over a stove top or grill because these are baked in the oven.
To make this recipe, you really only need a few things. However, depending on the topping options you prefer you can really make this meal your own.
First you need to decide on which toppings you want to have with your sheet pan chicken fajitas. Pictured here you will see diced avocados, shredded romaine lettuce, diced jalapenos, diced tomatoes, sliced limes, chopped cilantro, and chopped red onion.
Once all of your desired toppings are prepped, grate the cheddar cheese and slice the fajita veggies (bell peppers and white onion).
Now you are going to add your olive oil, seasonings, and chicken pieces and stir to coat.
This mixture is now ready to bake in the oven at 400 degrees F. This will take about about 20 minutes. You should stir halfway, at the 10 minute mark. You are stirring half-way through just to make sure that the mixture is cooking evenly. You want to make sure that the chicken has an internal temperature of 165 degrees F in the center of the biggest pieces before you remove the veggies and chicken mixture from the oven.
When it is done, it will look like this. The pieces of chicken are reading at 165 degrees F and have taken on a golden color along with the vegetables.
From here you can serve with the prepped toppings of your choice, sour cream, shredded cheddar cheese, and any other sauces or salsas you prefer. You can also serve this along with cooked rice or heated re-fried beans.
You can serve this in flour tortillas, over tortilla chips, or in a bowl. In this case, I have made a bowl.

Preheat the oven to 400 degrees F. Combine all of the dry seasoning ingredients together and set aside in a very small bowl.

On a parchment paper lined baking sheet stir together the sliced onions, bell peppers, olive oil, and seasoning mixture. Stir well.
