Irresistibly Chewy and Crisp Chocolate Chip Cookies

These chocolate chip cookies are golden crisp around the edges and chewy in the center. They are the perfect combination of golden crisp edges and chewy centers.

These cookies really are irresistible. I usually dip them in an ice cold glass of milk.

During the summer, I really like to use them for ice cream sandwiches with a scoop of vanilla ice cream.

To begin, place the butter into a microwave oven safe bowl. You only need to microwave the butter until you see it just begin to melt. This is also the time to preheat your oven.

Now you are going to add in your granulated sugar and light brown sugar. Whisk this mixture together until it is creamy and well combined.

Then you are going to whisk in the eggs until they are well incorporated.

This is what you want your mixture to look like after you have whisked in the eggs.

It is time to switch to a rubber spatula or spoon so you can gently stir in the all-purpose flour being careful not to over mix.

Add your chocolate chips, stir until just mixed in. Reserve some of the chocolate chips to top the dough with after they are scooped onto the prepared baking sheet.

As you can see, I placed about 2 or 3 chocolate chip morsels on top of each cookie. This is more for decoration, you do not have to do this step if you prefer not to. If that is the case, just go ahead and stir the rest of the morsels into the batter.

Bake until they are a nice golden brown around the edges and set in the center. This usually take about 8 minutes, but keep an eye on them because your oven may vary. Let them cool a few minutes on the baking sheet before transferring them to a cooling rack to finish cooling.

These chocolate chip cookies are bursting with chocolate chips. The golden buttery edges give a nice crispiness, while the tender centers are nice and chewy.

Ingredients
  • 2 eggs
  • 2 cup all-purpose flour
  • 1 cup light brown sugar,
  • 3/4 cup butter, (softened but not melted)
  • 1/2 cup granulated sugar
  • 10 oz chocolate chip morsels
  • 2 tsp vanilla extract
  • 1 tsp baking soda
  • 1 tsp salt
Instructions
  1. Preheat the oven to 375 degrees F. Then, in a microwave safe bowl, heat the butter until it begins to melt. You do not want the butter to melt completely.

  2. To the melted butter whisk in the granulated sugar and the light brown sugar. Whisk this mixture together until it is creamy and well combined.

  3. Then you are going to whisk in the eggs until they are well incorporated.

  4. Switch to a rubber spatula or spoon so you can gently stir in the all-purpose flour being careful not to over mix.

  5. Add your chocolate chips, stir until just mixed in. Reserve some of the chocolate chips to top the dough with after they are scooped onto the prepared baking sheet.

  6. Scoop out in 1 tbsp. balls of dough. You can place about 2 or 3 chocolate chip morsels on top of each cookie. This is more for decoration, you do not have to do this step if you prefer not to. If that is the case, just go ahead and stir the rest of the morsels into the batter.
